21 Day Paleo Vegan - Week 1

Every Sunday, for the next 3 weeks, I am going to post my meal plan for the next week and then throughout the week I will take pics post recipes and share workouts with you guys. All the recipes for these meals are found in the book Paleo Vegan. So here is the meal plan for week #1.

Monday
Breakfast: Shakeology
Snack: various nuts or Ezekiel bread w/ almond butter
Lunch: Asparagus-Leek Soup
Snack: Spicy Peanut Dip w/ veggies
Dinner: Quinoa w/ Yams and Moroccan Spices

Tuesday
Breakfast: Shakeology
Snack: various nuts or Ezekiel bread w/ almond butter
Lunch: Heirloom Tomato Salad
Snack: Roasted Pumpkin Dip
Dinner: Buckwheat Soba Cakes w/ Avocado

Wednesday
Breakfast: Shakeology
Snack: various nuts or Ezekiel bread w/ almond butter
Lunch: Sunflower Salad
Snack: Spicy Peanut Dip
Dinner: Quinoa w/ Leeks

Thursday
Breakfast: Shakeology
Snack: various nuts or Ezekiel bread w/ almond butter
Lunch: Baby Kale Salad
Snack: Roasted Pumpkin Dip
Dinner: Pineapple Fried Rice

Friday
Breakfast: Shakeology
Snack: various nuts or Ezekiel bread w/ almond butter
Lunch: Sunflower Salad
Snack: Spicy Peanut Dip
Dinner: Quinoa w/ Leeks

Saturday
Breakfast: Shakeology
Snack: various nuts or Ezekiel bread w/ almond butter
